I have a home built in the late 1950s with cedar clapboards painted white?
Can they be stripped down to the natural wood and stained
Probably not. The paint should have penetrated the cedar fairly well. You could remove the surface film but the cedar will have a white stained appearance. You may be able to use a tinted stain to pull out the grain of the wood and add a bit of color. Your best bet is to strip just a bit and see what it looks like and how much the stain has penetrated.
A word of caution, there is certainly some paint on there that contains lead. Don't go too crazy over it, but do take some precautions. Use a dust mask while scraping, put down plastic to catch the paint chips and dispose of them properly and most important, wash your hands well and shower after working on it.
